Has anyone had any experience with recently released Uberti model firearms?

I've heard from some that ever since Uberti was bought by Beretta their quality control rates have skyrocketed. I've also heard that their quality is spotty at best. I've also heard that quality has gone downhill in the last decade.

Does anybody know the truth to this?

All the aboveis true. Uberti makes not only guns under their name but under anybody else's who they contract out to. These latter guns are often built to a price point, if on the lower end then the quality could be spotty. I have recently seen new Ubertis on the shelf ranging in price from under $300 to better than $700. Dealers have also changed stock in some cases and are now carrying the better grades instead of the lower ones so some would come to the erroneous conclusion that Ubert's QC has improved since they were bought out. The same is true if the mid-upper quality guns were switched to the lower ones. I have seen this happen in stores that now carry the Beretta Stampede instead of the same quality Uberti.
In a nutshell, Uberti makes guns to various price points. To meet the lower ones, some things may be sacrificed to meet them. Often it is cosmetic but going the extra mile in finishing is also a factor.
